The month of May has always meant strawberry season to me. I love this fruit so much, it’s like a synonym of the beginning of a warmer weather, of summer, of holidays… Everything I love in life !
Last year at the same time I shared my very famous strawberry salad recipe with you, which is one of my all time favorite ! This year, I decided to share a new recipe with you to celebrate strawberry season, and it’s a smoothie ! I call it my Spring Smoothie, both fresh and nourishing, especially made for spring and the first heat of the year, perfect for a snack or a light & detox lunch !
For 1 person (one big mason jar) :
– 1 glass of coconut water (about 250ml)
– 1 banana
– 100gr of strawberries
– 1/2 lime
– 1 to 2 tablespoon sugar syrup
– A few branches of fresh mint
Cut the strawberries and banana into small pieces and put them inside your blender.
Add the juice of a half lime and the sugar syrup.
Cover it all up with a tall glass of fresh coconut water.
Add a few mint leaves.
Start blending by increasing the speed gradually.
Serve and cover with fresh chiselled mint leaves

For a stronger lime taste, you can directly add half of the lime cut into pieces with its peel inside the blender, instead of just adding the juice.
If you don’t have sugar syrup, regular powdered sugar will do. You can also skip this step if you’re not feeling like eating sugar !
For a fresher Spring Smoothie to drink instantly, keep your coconut water in the fridge before adding it inside your blender ! You can also add a few ice cubes inside your blender for more consistancy.
You can also use frozen fruits or pieces of fruits in your smoothies, it works really well and makes it fresher !
